Introduction- Saints Under Construction

Saints under construction is what we all are, if we want to get to heaven.  I have always wanted to write a book on my life and thought this would be a good way to start as things pop up in my mind.  Most saints aren't born "saints".  It is a journey and our walk toward the light that brings us closer to our call to holiness. You may find me post anything from cooking and food, to faith, family life, marriage, and stories from my youth as a daughter of Cuban exiles living in the State and abroad. I hope that in my ordinary life (and not so ordinary) you might find some similarities in your life and through my stories and blog posts find support and encouragement for your life and journey to our final home. Paleo Buns

“Paleo” buns – Not Atkins friendly

I started following a recipe online (http://ultimatepaleoguide.com/paleo-lunch-buns/ ) but I didn’t have enough of one of the ingredients, arrowroot.  It called for a cup and all I had was the amount of a spice bottle.  So I decided since I already had 2 very ripe (black) plantains peeled, I’d improvise like I usually do.  I remembered I had coconut flour in the freezer so I used ½ cup of that.  After mixing all of the simple ingredients together, even adding about 5 tablespoons of water, the consistency was still too crumbly to hold together.  Think. Think.  I added an egg that also wasn’t part of the original recipe.  I was able to pat out 5 round “buns”.   It’s the size of a typical sandwich bun but flat as a pancake. This experiment wasn't half bad.  I spread some butter and topped it with a fried egg, a slice of ham, and a slice of cheese. (I know what you are thinking: cheese is not Paleo, but I am not too strict - grains are my main concern)

Ingredients:
-       2 ripe plantains
-       ½ cup coconut flour
-       1 tsp course salt
-       1 tsp arrowroot
-       1 egg
-       5 tbs water

Directions:
Oven Temp: 375
Time cooking: 20-25 min

Mix all ingredients together to a smooth consistency.
Pat into bun sized pancakes

Place on parchment paper and bake to golden.
