“Paleo” buns – Not Atkins friendly
I started following a recipe online (http://ultimatepaleoguide.com/paleo-lunch-buns/
) but I didn’t have enough of one of the ingredients, arrowroot. It called for a cup and all I had was the
amount of a spice bottle. So I decided since I already had 2 very ripe
(black) plantains peeled, I’d improvise like I usually do. I remembered I had coconut flour in the
freezer so I used ½ cup of that. After
mixing all of the simple ingredients together, even adding about 5 tablespoons
of water, the consistency was still too crumbly to hold together. Think. Think.
I added an egg that also wasn’t part of the original recipe. I was able to pat out 5 round “buns”. It’s the size of a typical sandwich bun but
flat as a pancake. This experiment wasn't half bad. I spread some butter and topped it with a fried egg, a slice of ham, and a slice of cheese. (I know what you are thinking: cheese is not Paleo, but I am not too strict - grains are my main concern)
Ingredients:

2 ripe plantains

½ cup coconut flour
-
1 tsp course salt

1 tsp arrowroot
-
1 egg
-
5 tbs water
Directions:
Oven Temp: 375
Time cooking: 20-25 min
Mix all ingredients together to a smooth consistency.
Pat into bun sized pancakes
Place on parchment paper and bake to golden.
